This shop painstakingly makes its own braised pork and miso. Not only noodles, but also a host of set meals makes us popular with a wide range of folks, from couple to families.

We make our soup stock carefully from Kawamata shamo chicken bones, three kinds of fowl in all, and also pork knuckle and backbone.
It has a simple but deep, impressive taste.
We use two kinds of flour in a homemade blend to bring our noodles to just the firmness we want, and then let the dough rest for over three days before we use it.
