Since our founding in 1879, Otani Chukichi main shop has continued a long tradition of manufacturing.
The wave of automation has not consumed us, and Hakuyo stubbornly continues to hold fast with tradition which we combine with new technologies to make a wonderful tasting sake.
We always feel “This sake is not enough” and it mustn’t interfere with the taste of dishes, so with this in mind, we use a low acid yeast.
