Our cuisine includes kajika (fluvial sculpin) which is almost unheard of these days, somewhat of a wonder.
Depending on the region, people sometimes call kajika "Gori" "Donko" and other names as well.
We always have "Tempura" "Shioyaki (salt-barbecued)" "Karaage (deep fried)" and other ways of preparation, and beside these we have "Kotsu Shu (sake with the bone in it)" "Kotsu shu" is "Gori Shu" in the Kanazawa area; we use all parts of every kajika.
We have both single servings and meal sets of karaage and tempura.
Kajika are not plentiful, and the shopkeeper here gets local grade-schoolers to seed the rivers with sculpin fingerlings.
The owner obtains the toppings for the sushi from Iwaki or Koriyama.
In addition, we use buckwheat flour from inside the prefecture.
We will deliver or cater to celebrations or Buddhist ceremonies in the area.
