For you, we stone-grind flour from Hokkaido buckwheat by hand.
In Juppensha Ikku's interesting story, "Gin No Waraji(The Golden Sandals)" there is mention of "Daikon soba"
This "daikon soba" is freshly handmade with finely chopped daikon mixed into the dough, and then the noodles are put into a bowl and covered with sauce・
The texture of the soba in the mouth along with the little crunch of daikon bits between the teeth has the perfect sweetness of the soba along with the slight bitterness of daikon. It comes highly recommended.
In addition, we use special local products and seasonal vegetables in our handmade soba.
"A shop making slow-food" is how the media, newspapers, magazines, and TV describe our shop, and people who desire safe and worry free eating should come here.
