At the gateway to Michinoku area, “Handmade Chinese Dining Yatabe” sits at the entrance of Shirakawa. We use blue bamboo to roll out our noodles, and char-grilled “grilled pork” etc. We stick to the old ways as a base of our making Shirakawa ramen. We are a little far from city center but since we prepare authentic handmade noodles and offer original free “bones”, we attract a lot of repeat customers at lunch.
On weekdays we make a limit of only 80 servings of the medium-thin wavy noodles, completely made by hand. A characteristic of our soup stock is that we make it only from the chicken bones, whole chicken, and pork knuckle, and use no seafood at all. Scallions and onions only are added to this simple base. Here, we refuse to compromise our taste.
