Our cream puff "Bishoseki" is crunchy and fluffy. The thin and soft crust has an enjoyable texture. The outside of the dough becomes crunchy after baking, and after a little bit the moisture in the cream makes it fluffy.
We stuff it with plenty of cream. We use only a certain kind of eggs from Shirakawa City, Azuma Higashi "Tamagokobo Ishii"
Weekdays we make 700-800 of these, and on weekends and holidays we sell about 2000 in one day as our main product. We have 30 kinds of shortcake, all of them 315 yen apiece. Children can buy for themselves. Our "Bishoseki" and cake sets are also much in demand.
