Our shop is on the street in front of Shirakawa Station.
In making “Toichi Soba” the entire hulled buckwheat seed is stone ground and then mixed 90% with 10% wheat flour.
We get buckwheat flour from Shirakawa to use with our homemade flour, so the noodles are completely handmade!
There is a bright feeling inside, and we fill up with regular customers.
The thin noodles go down easily after dipping in the robust chicken broth.
Special chili oil whets the appetite.
In the evening we are open late as a soba tavern.
