Homemade stone-ground buckwheat flour mixed at 80% makes our soba thin and smooth going down.
This is Shirakawa's popular soba shop.
Here we really suggest you try our "Kamojiru (waterfowl soup) soba" and a Thai soba. Please savor with our spicy-hot, fowl-flavored dipping sauce as the firm, chewy soba texture brings out the delicious flavor of the bird with the noodles. A half-and-half serving of soba and udon noodles has really caught on.
Please enjoy with the broth made every morning from Louth kelp, shaved dried fish, and softened water.
