At Ravenna we prepare our coffee with special care to satisfy our pickiest customers. First we select high quality raw beans and take extra steps to ensure tasty, real coffee.
*Hand picking
We look though high quality beans by hand one by one to find beans that have begun to ferment, are worm-eaten, or are broken and split; or to find stones and other things that might get mixed in. We check before roasting, and after roasting as well, and must remove from 10-30%, because these things will affect the taste of the coffee of course, and cause it to be muddy etc.
*Proper roasting
Left over in the center of the coffee bean is a strong bitterness and acidity. Complete roasting will give a good taste and a rich aroma. Different varieties of beans also have different characteristics, and different roasting points (for mild roast or deep roast) will depend on these qualities to enhance the flavor and provide a lot of rich aroma.
*Freshness
Even if the beans are hand-selected and perfectly roasted; if they are not fresh the taste will not be so good. Drinking this bad coffee can result in heartburn and stomach discomfort as well. Good coffee will swell up when you pour the hot water on it.
