For the handmade miso at our shop, our ingredients are carefully selected domestic soybeans, and we put all of our effort into the rice koji, making it with rice from Fukushima.
"Yamasa Miso Kojiten" makes original miso that we age naturally for one year, giving it a mellow constitution.
It should be noted that this miso is additive-free, and it is best to open it soon after you receive it. It will keep well in the refrigerator.
One kilogram is 680 yen, and we can measure and sell any amount upwards from a kilogram. In addition, we have different cardboard boxes lined with plastic.
Moreover, this shop's "Koji No Megumi" is a Fukushima Prefecture name brand.
We only use the largest size Japanese soybeans, and we contract with farmers directly to get rice.
We use a great deal of traditionally made koji, being careful not to break the rice grains and to let it ferment naturally, so that it develops into an additive-free miso with a great fragrance and wonderful taste.
