We are quite particular about the "noodles" in our most popular ramen.
We strive to make them "springy and slippery" so they glide down your gullet. We research the type of flour we use for our noodles. We made different strengths of dough so the noodle would be either strong or weak. Through trial and error, we have found the best way to blend two types of flour to get what we were looking for, and also sell fresh "handmade noodles"
For the soup stock we add seafood to the chicken and pork bones. We stew the braised pork over several hours, so it is tender and easy to digest for older people. We do not use sticky rice in our rather inexpensive fried rice set meals. Along with the ramen, the veggie-loaded gyoza are very popular.
Our "miso ramen" is characterized by a mellow miso and mild smell, and we have lots of kinds, including "Zaru ramen" for dipping in sauce! Since we opened we have offered a popular set meal of the day. Our operating principle is "Family cooking" We have two kinds of fish and meat, and we offer "One soup, four side dishes" all for a reasonable price, which is great. In the evening you can eat different set meals while you drink.
