We are seriously committed to the qualities of the materials we use. We have been using mainly domestic buckwheat flour (Fukushima, Ibaraki, and Fukui).
For our soup stock we use shavings of very hard bonito, small bonito, and Yaku mackerel which we age with soy sauce and sweet wine vinegar for three or more weeks. Usually people have some hesitation to enter a soba shop, but you needn't have any qualms to come here.
You get a great amount for a reasonable price.
